Goat Cheese Baked Brie with Crushed Almond Crust

There’s not much in this world I love more than cheese. And up until a recent trip to Florida, I thought I had tasted it all. But man was I wrong. OH, I was so wrong. During one of our family Sunday dinners at my BFF’s parent’s house, Papa Q busted out his baked brie recipe. As a major cheese lover, I am embarrassed to say that prior to this night, I had never tried baked brie. It was something I always wanted to try, but just never had for one reason or another.

He taught me his version, which involved regular brie from cow’s milk & walnuts. Well, I decided to put my own spin on it in an attempt to make it slightly healthier (or maybe these are just the ingredients I happened to already have). Here’s how I made baked heaven:

You’ll need:
โ€ข 1 wheel goat’s milk brie (I used a mini one)
โ€ข 1 egg
โ€ข 1/2 cup panko bread crumbs
โ€ข 2 tbsp crushed almonds

Preheat oven to 350หš. Whisk egg in a bowl and set aside. If you’re using raw almonds, crush them between two sheets of wax paper using a kitchen hammer. Place bread crumbs mixed with crushed almonds on a plate. Egg wash the brie wheel and cover in the bread crumb & crushed almond mixture. Bake at 350หš for 15 minutes. Serve with the crackers & fruits of your choice.

It’s that easy to make probably the most delicious thing you will ever eat in your life. I feel like I’m going to make this at least weekly from now on. And the fact that it’s goat cheese makes it kind of healthy, right? …Right?
