Ok, let’s be honest: comfort food is probably one of everyone’s favorite things. The warm carbs, the delicious, melty cheese–it’s all so…comforting. And now that it’s winter, there’s nothing I’d rather have in front of a warm fire than a big bowl of cheesy pasta and a glass of red wine. Unfortunately, bingeing on mac & cheese and mashed potatoes isn’t healthy. Last week, I satisfied my craving with some deliciously cheesy spaghetti squash and from then on, I’ve been inspired and interested to find more healthy alternatives to classic comfort food favorites. So I’ve come up with this great collection of recipes that are both healthy (ok, semi-healthy) and tasty (full-tasty). Just click the link for recipe info. These healthy recipes were all found on Pinterest – where I’ve been spending the better half of my days lately.

I really want to try a recipe with spaghetti squash. Someone at church last week was talking about something she was going to make with it. I absolutely love squash, but usually with tons of butter & brown sugar, lol. But this one has so many great recipes for healthy living I’ve got to try it.
January 6, 2014 @ 12:24 pm
You’d LOVE spaghetti squash then! It does still have a vegetable taste to it, but with the sauce, it is very similar to pasta. I like it better because it’s not heavy. Let me know if you try it!
