Fresh Citrus & Kale Salad

As I’ve shared in the past, kale is a major favorite food of mine. I’m not really a huge salad lover (beside caprese, I love it!) so when I make my own salad recipe, I try to make it different. I made this kale salad for lunch recently and it was so tasty, I had to share. Here’s how I made my fresh citrus & kale salad:
You’ll Need:
4 cups kale, chopped
1/2 cup broccoli slaw
20 raw almonds
1/2 orange
1 clove garlic, chopped
salt & pepper to taste
1tsp olive oil
Instructions:
1. First, you’ll need to warm the kale in a pan with the olive oil & garlic on medium heat. Cook for about 5 minutes, tossing every minute or so. Add a pinch of salt & pepper to taste. Be careful – you don’t need much salt! When the kale is ready, let it cool in a bowl.
2. As the kale cools, cut an orange into wedges & remove the peel.
3. Wash the broccoli slaw and toss with the kale.
4. Sprinkle the almonds on top (you can also use almond slivers) and add the oranges.
I enjoyed mine at room temp, but you can certainly chill the salad before serving. The citrus adds a little sweet tanginess while the almonds serve as the protein. I love this salad!

Thanks for sharing Megan! I’ll have to give this salad recipe a try. I love salads from restaurants, but I can never seem to make one tasty enough at home. I’ll have to follow your lead and start experimenting to see what I come up with!

This looks beyond delicious! I’ve been eating a ton of kale lately too. I toss mine with a little lemon juice and olive oil and throw on some freshly shaved parmesan cheese and edamame and it’s seriously sooo good! Thanks for the inspo. I’ll have to give this version a try!
