Holiday Hosting: Fall Harvest Salad with Pumpkin Maple Vinaigrette

Hosting has always been one of my favorite things, not only because I love staying home (ha!), but also because I love creating a beautiful spread for friends to enjoy. I love the creativity of picking a decor scheme and pulling it all together with different foods and drinks. And now that I live in a home larger than a few hundred square feet, I’m able to host more often. In fact, I will be hosting Thanksgiving this year, yay! So that inspired me to create a lot of content around the food we’ll be having, the drinks we’ll be making, and of course, the tablescape! First up in the Holiday Hosting series is a delicious and healthy fall harvest salad.
Fall Harvest Salad
Ingredients
- 4 cups kale
- 1 cup arugula
- 1/2 butternut squash
- 1/2 can chickpeas
- 1 handful pecans
- 1 handful sunflower seeds
- 1 sliced apple
- 1/2 tsp tumeric
- 1/2 tbsp plant-based butter
- to taste salt and pepper
- 1 tbsp olive oil
Instructions
- In a pan, warm olive oil and butter
- Cube butternut squash and add to pan
- Add chickpeas
- Add turmeric and salt and pepper to taste
- Mix and simmer until tender
- Massage kale and add it to serving bowl
- Add arugula and toss
- Add butternut squash and chickpeas
- Arrange apple slices and sprinkle pecans and sunflower seeds
Pumpkin Maple Vinaigrette
Ingredients
- 5 tbsp olive oil
- 1 tbsp balsamic glaze
- 1 tsp apple cider vinegar
- 2 tsp pumpkin spread
- 1 tsp maple syrup
Instructions
- Combine ingredients in your cutest mason jar and mix

This recipe makes me so sad about my apple allergy because it looks so delicious! It really is the perfect autumn salad. I’d have to see what I could do to make swaps with pears or other seasonal fruits.

Not only does this salad sound like a burst of fall flavor, it’s beautiful! I love all the colors from the deep green of the kale to the red from the apples and orange-yellow of the squash. This would even be perfect to serve for Thanksgiving!
