Not only is a mason jar lunch quick and convenient, but it’s also super cute! Ever since I first heard of this concept, I have loved preparing my lunch in a mason jar. It just brings a little bit of charm to lunchtime. I’m sure there are tons of different options for a mason jar lunch, but I always find myself resorting to this one simple recipe, so I thought I’d share it.
Here’s my mason jar lunch recipe (start with the first item listed):
- 1 tbsp extra virgin olive oil
- 1 clove garlic, minced
- a dash of salt and pepper
- a sprinkle of cayenne pepper
- 1/2 cup chickpeas
- 1/8 cup diced onions
- 1/4 cup diced fresh mozzerella
- 1/4 cup diced tomatoes
- 1 handful of thoroughly washed arugula
To eat it, simply stick your fork in and start taking bites. If you’d prefer it to be mixed up, don’t fill the jar all the way and shake it up to mix the contents around. Of course, you can adjust the amount of each item based on your preferences.
This lunch is the perfect treat for me. Serve with some toast or almonds and bring an apple as desert and you’re set!

Such a great concept. I have this fascination about mason jars. Anytime I find a restaurant that serves their drinks (be it orange juice or beer), I am immediately intrigued.

I think mason jars are so convenient! Desserts are always easy to put in small mason jars (cupcakes or parfaits). I also like to carry soup or chili in them. Layering a taco salad is easy too, just leave the chips out, because you don’t want them to get soggy if it is going to be a while before you eat.

Love this! I used to do this for our dinner salads and it was so quick and easy. I’d prepare them ahead of time for the rest of the week and we would just add the dressing when we actually ate it. Best idea ever and great portion sizes.

Megan, I used Romaine lettuce, feta cheese, blue cheese dressing, shredded cheddar, shredded carrots and tomatoes. I used to do this all of the time for my husband. Cool packaging, pleasing to the eye and reusable..all pluses.

I have tried this! I cut up lettuce, tomato and add diced cucumber and lemon juice for zing! It’s quick, easy, and limits my portions which is great!

The fresh mozzarella has stayed fine for me, but I haven’t tried other cheeses. Then again, I make it the same day I eat it! 🙂

I love this concept! So innovative and easy. I’m always taking my lunch to work in a Wal-Mart bag, and my co-workers are always saying that I need to get a lunchbox. It would be so awesome to bring my lunch in a mason jar! And this sounds super tasty!
