Sparkling Pineapple Punch

Happy Friday! Ever since college, I have associated Friday with happy hour. At FSU, everyone went to Potbelly’s happy hour on Fridays. It was one of those things you look forward to all week. The sunny outdoors, socializing with friends and sipping on tasty cocktails was the best part of any Friday. In reality, the rundown bar that served almost exclusively well alcohol was pretty sloppy by 7pm. And let’s just say I’m glad Instagram wasn’t invented yet back then. If you wanted to take a photo, you had to bring your digital camera and there’s no way you weren’t losing that thing at Pots. So there aren’t many photos to document those happy hour outings.
Nowadays though, I’m enjoying a much more mature and classy happy hour: hanging at home on my balcony with my wonderful boyfriend or friends and winding down after a long week with my own hand crafted cocktail. I recently learned about Splendid Blend via Twitter and thought the blended fruit drinks sounded yummy. When they reached out for a collaboration, I knew I could create something delicious using their already blended flavors as a base.
I’ve recently been on a mimosa/bellini/anything sparkling kick so I whipped something up using Splendid Blend, champagne & some flavored liquor. Here’s how I made my sparkling pineapple punch:
Mix 3 parts Splendid Blend cranberry/orange/pineapple drink with 3 parts champagne. Add one part pineapple vodka. Garnish with a pineapple slice & rosemary sprig.
I can’t get enough of this drink. It’s super easy, yet very unique tasting. It’s not too sweet, but full of pineapple flavor. I’ll be drinking this one all spring and summer. Cheers!

Wow I could really do with one of these right now! It looks amazing and I love pineapple. Might have to go and find some pineapples this weekend and enjoy them in the sun!

My favorite is Green Fairy: Place a sugar cube in a spoon placed over a shooter glass. Pour Absinthe pour the sugar cube.
