Summer Poolside Cocktails

During our time in Mexico, there was one funny thing we all noticed about our drinks: they loved adding cherries! It was so unexpectedly tasty. I like a good cherry as much as the next girl, but I don’t typically add them in my drinks. After my trip, I was inspired by the cherries and decided to create a new summer drink, so I headed to Walmart to gather all my favorite cocktail ingredients.
My favorite drink to have by the pool is a moscow mule. To tell you the truth, it’s always a good bet: not too sweet and not too bitter. To bring me back to Mexico, I decided to add some cherries for a little fruity punch. To enhance the cherry flavor, I use Cherry 7up (available at Walmart). Here’s my recipe:
You’ll need:
2 oz vodka
4 oz ginger beer
1 oz cherry 7up
1 lime wedge
2 cherries
Instructions:
Combine liquids in a cocktail shaker with ice. Shake and pour into your glass of choice (I usually opt for a copper mug or a champagne glass, like I did here). Squeeze lime wedge into drink. Garnish with a cherry.

So so so yummy. This cherry drink is so perfect for a day by the pool, like we enjoyed here. These photos were taken at the Hilton Sante Fe near Mexico City. It’s insane how hard it is to find a pool in Mexico City. If you’re like me, when you think of Mexico, the first thing that comes to mind is the beach and having a drink poolside. But that’s not the case in Mexico City. After some research, we came across the Hilton in Santa Fe and decided to make a day trip over. It was about 45 minutes from the Mexico City, but definitely worth the drive.
We went on a Friday, which just happened to be the weekly TTC – tacos, tequila, and cerveza. It’s definitely worth the trip if you’re in the area. It was the first time we had real Mexican food while in Mexico and they did not disappoint. It was by far the best Mexican food I’ve ever had. There was a big party next to the pool in the outdoor restaurant area, complete with a buffet, meat carving station for tacos, and obviously a full bar.
Lauren, Alex and I spent the day lounging in the sun, sipping cocktails, and talking about boys. I think it’s safe to say this girls’ trip was a major success. Now that we’re back in the US, we’re going to be making regular trips to Walmart so we can sip my cherry Moscow mule cocktail together. And we will most definitely be listening to Justin Bieber’s remix of Despacito – it’s all we heard down there!

Gosh, these photos make me wanna go on holiday right now! I want Mexican food too and that cocktail looks so delish! I think something refreshing by the poolside, maybe a mojito ❤️
